JOB TITLE : COST CONTROLLER

Position Reports to : Financial Controller & Operations Manager
POSITION SUPERVISES : COST CONTROL ASSISTANTS – CENTRAL STORES
POSITION PURPOSE:
To ensure effective Cost control system is in place to monitor, control and reduce cost with
the aim to maximize profitability of the organization.
MAIN DUTIES OF POSITION
• Oversee and ensure that all receiving procedures are adhered to, and report any
deviations to the management.
• Verify and ensure that standard purchasing procedures and specifications are followed
for all raw material purchases, as per the requirement of operations.
• Ensure that all Inter-outlet transfers are properly authorized and recorded in the
system.
• Ensure that all Central Store requests from Kitchen and Outlets are generated through
FMC system.
• Monitoring and Approving of all Purchase requisitions as per the SOP.
• Spot check on production to ascertain actual usage to that of standard recipe’s from
time to time.
• Review and update Recipes in the system from time to time.
• Run production yield test to ascertain wastage factor from time to time.
• Ensure that portion size for all food / beverage items are in line with the standards set
in the recipe manuals.
• Ensure that the Month end physical stock counts are carried out and the relevant
records are passed on to the Inventory Controller.
• Ensure that variance reports are generated at the end of the month. Variances are
identified and corrective measures adopted to cut down any abnormal variances.
• Responsible for preparing the F&B Cost report for all WG outlets by the stipulated date
and hand over to Management after ensuring that all figures have been reconciled.
• Assisting the Management in resolving any control related queries.
• Maintaining of all relevant department records.
• Comply with all yearly audit requirements.
• Any other duties/responsibilities assigned by the department head.
